It is great to see a restaurant use modern techniques to cook and still respect tradition. This restaurant has got the balance right. Small simple menu but excellent quality. I had the creamy chicken broth which was rich and full of flavour without being too overpowering. The meat is cooked sous vide and was delicious. Very friendly English speaking staff and English menu. Best ramen in Kanazawa.

MoreLucky to have found this ramen bar on a rainy, cold night. Small (English) menu available with 3 types of ramen soup to choose from. I ordered the soy sauce base and added an egg. The piece of pork was delicious as it was done sous vide - a unique touch! Would definitely eat here again.
MoreReally delicious! The soup is gentle and light, but the taste is solid and there are salt punches. The noodles are straight thin noodles with a firm texture and a chewy texture. Char siu is also pork loin, chicken breast, bird thigh and variety and everything is delicious (I personally liked the bird thigh very much)And it was well balanced overall, and it was delicious without getting tired until the end without changing the taste.It is a really recommended shop that you will want to eat again and again. It was a feast!

The second store of Ugisu in Katamachi.It is a ramen shop located in a shopping center full of one-way streets.There seems to be no parking lot, but the nearby parking lot is cheap as it will cost 100 yen per hour.At the counter main, it is a narrow store with one table at the back.Here is a song by Imono Kiyoshiro in the shop.Semi-rich flavored salt chicken whitewater seafood soba (950 yen including tax)I heard a lot of white water. It is surprisingly easy to smell, citrus fruits.Concentrated oyster buckwheat (950 yen including tax), although there are large oysters used, oysters are not included. However, the soup is delicious with chicken white water with solid taste of oysters. It also contains fine dust of onions, making it taste good as it is assassed.Shoulder loose is rare and there is a bit of a beast feeling, so there are quite a few arguments. It is hard to go by traffic a bit, but the taste is easy to eat and it is very tasty.Payment is done over the counter.

I cannot claim to be a ramen expert, but both the soy and rich chicken ramens with the full toppings were absolutely amazing.The depth of flavour in both was amazing and the noodles were a joy on their own. So far one of the best dishes i have had.Also the chaps running the place were really friendly. It was also really amazing to see the workings of the restaurant.

Wow beyond expectations and better or on par with Ichiran ramen maybe! We had refills upon refills... the meats, be it pork or chicken are delicious and tender. Do go out of your way to have a go at this, loads of extras encouraged =)

MoreHow this gets 1st on google list is baffling. 1060 yen for 3 slices of cold ham and a lightly seasoned egg for their seafood-based soup ramen. 1030 yen for the normal salt-based soup, and presumably the same "toppings", advertised as "+ ALL special toppings".

MoreI tried the number 3 menu (rich flavour soup) i dont really know what kind of soup is that and i think it is ok becoz i am fan of salty soup. The meat is good and tender but i just think combination of pork and chicken is not a good idea

Worth the wait. A stylishly and minimalist design which means you focus purely on the ramen itself. The queue was approximately 30 mins but the food was definitely worth the waiting time. The only negative I can think of is that the guys could be a bit more efficient in terms of timing and use of the space, but still a five star review.

MoreVery classic ramen shop. The music they play is also very classic! Had the creamy chicken n seafood base noodles (#9) with chix breast, thigh n chashu. Noodles r firm type that I like. The chix r oh so tender n juicy. Chashu is perfectly done also. The onsen egg is very flavourful without being too overwhelming. Very good experience here.Garnished w negi (leek) n yuzu skin which gives it a Tanginess.
MoreQuick, efficient place around the corner from us. Good ramen, clear soup type so not overly salty. Perfectly soft boiled egg with the jam custard texture centre. The chilli sesame oil (?) stuff was nice. The chicken was super tender a juicy. The pork was a bit tough. We had a salty broth and a soy broth one with extra shallots. We are interested in trying another few places to see if this is meant to be the best ramen around our if we are just not ramen people.

We had the salt and the soya ramen and both were amazing. They add a citrus twist to the broth which makes it light and refreshing. The pork was excellent and the noodles were firm just as we like them. Staff is super friendly and we will definitely come back. English menu is available and makes things easier when it comes to decide what to eat.
MoreWe ate special soy sauce and chicken Hakuyu seafood on another day.Soy sauce works well as soy sauce is not too thick and it is delicious as assari.Chicken Shirayu had a good taste and taste.Three kinds of cold-cooked pork chow (shoulder loin, chicken mune, chicken momo) on a specially made ramen was excellent.
